Jack fruit rice cake is one of the famous food item prepared in Tulunadu. Manglore recipe is something like we prepare most of the food items using rice or coconut to it.It is one of the core ingredient to most of our recipes . Jack fruits is one fruit which is liked by most of the people in south canara. Jack fruit is grown during rainy season.From then on most of the people prepare this food item(pelakai dha gatti) and they have it in their breakfast.We use teak leaves to cover it.We can even use banana leaves but teak leaves will give a different color and odor to it.It will be sweet and we can have it with chicken curry(kori gasi) which is the best combination to pelakai dha gatti. If you are a vegetarian then you can have it with sambar also.steps involved in preparing this recipe is
step 1: Get a jack fruit.Cut the jack fruit into pieces and separate its seeds from it.keep it aside.One of the tough task involved in this recipe is to cut the jack fruit which is not easy.i used to help out my mom while separating seeds from jack fruit piece.
step 2: soak rice in water for 4 hours.
step 3:Grind the jack fruit with soaked rice and add pepper,cardamom also .Add jaggery if required. Some jack fruits will not be that sweet so we can add jaggery to it.Do not add water.Make a thick paste so that we can cover it using teak leaves.
step 4:Add grated coconut and salt to the paste and stir it well.Let the coconut and salt mix well.
step 5:This cake is made using teak leaves which gives a nice color and smell to it.So the next step involved is add the thick batter of jack fruit into the teak leaves and fold it and place it on the steamer.
step 6:For first 15 min keep it at high flame.Let it first cook faster and later let it bake at low flame for 45 min.We have to maintain the flame so that it doesn't gets over cooked.
step 7:After it gets cooked ,off the flame and remove the lid cut the cake into pieces.
step 8:Now its ready for serving.Serve it hot.We can have it with chicken curry(kori gasi) which is a great combination to it.Most of the manglorians prefer it with kori gasi which is a bit spicy.There is a combination of sweet and spicy.Most of the manglorians prefer to have spicy food so I prefer to have it with kori gasi.
This is very delicious food item.we can have it as of our breakfast or even as our lunch or whenever we wish to have.Using jack fruit we even prepare dosa by using the same batter.Instead of baking it on to steam using teak leaves we can prepare a dosa out of the same batter by adding ghee which is very sweet and tasty.During rainy season in most of houses we can find this food being prepared.This very healthy also.
Again the seeds which we have separated can be added while preparing sambar. Or we can just boil those seeds add salt to it and have. My mom used to say like during their childhood they used to boil those seeds and have which is very tasty and that could fill their stomach also.Most of the people in olden days were not so rich.They dint even had food to have in that case they used to have jack fruit.They prepared various recipe on jack fruit.One of the famous recipe pelakai dha gatti. And it is still mouth watering dish to manglorians. Rarely we can find people saying"I don't like this recipe".But people who are originally from tulunadu,staying out of this place just love this pelakai dha gatti.
